CELTIC APPLE CRISP WITH IRISH WHISKEY WHIPPED CREAM
I'm asked the same question every night after dinner, like clockwork.
“Mommy, what’s for dessert?”
My six year old, like most, is big on desserts. Well, all things sweet. Its surprising she’s got any teeth left in that head of hers.
She knows me all too well though. I meal capped off with some sort of sweet confection is a mutual craving. Plus, it gives me an excuse to try out new desserts or tinker with the old.
Like this one.
Celtic Apple Crisp with Irish Whiskey Whipped Cream is a kicked-up version of apple crisp with the addition of Irish ingredients, including butter, oats and whiskey. It's the perfect dessert for the upcoming celebration of St. Patrick's Day.
Apples are big in Irish diet and folklore. It's said that a girl can glimpse into her future love life by peeling an apple in one continuous ribbon, then tossing the peel over her left shoulder; the peel would reveal, on landing, her future husbands initials. But, alas, if the peel broke, the woman would remain unmarried.
Enough with the folklore and back to the good stuff.
This apple crisp is full of warm flavors, tender apples and a buttery oat crumble topping. That's all finished off with a luscious whiskey whipped cream. (Of course, for kids, you might want to whip up a whiskey-free batch.)
To keep this recipe as Irish as possible, use Kerrygold Irish Butter, McCanns Oats and Jameson’s Irish Whiskey. But, really, any brand of those ingredients would do.
CELTIC APPLE CRISP WITH IRISH WHISKEY WHIPPED CREAM
INGREDIENTS:
Filling:
1 cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
6 Granny Smith apples, peeled, cored and sliced
1/4 cup water
2 tablespoons Irish Whiskey
Crisp Topping:
1 stick unsalted butter, softened
1 1/2 cups light brown sugar
1 1/2 cups all-purpose flour
1 1/4 cups quick-cooking rolled oats (McCanns)
3 tablespoons canola oil
1 1/2 teaspoons cinnamon
3/4 teaspoon salt
Irish Whiskey Whipped Cream:
1 cup heavy whipping cream
3 tablespoons white sugar
2-3 tablespoons Irish Whiskey
DIRECTIONS:
Preheat oven to 350 degrees F. Grease a 9-by-13-inch glass baking dish or pan.
Combine sugar, flour, cinnamon and nutmeg in large bowl. Add in sliced apples and toss until apples are coated in mixture. Pour apples into prepared pan. Sprinkle water and whiskey evenly over apples.
For the topping, add all of the ingredients into a medium bowl. With a pastry blender or your fingers, combine until mixture resembles coarse crumbs.
Evenly sprinkle topping over apples and bake 45 minutes, or until filling is bubbling and the topping is golden brown. Cool 10 minutes before serving.
Meanwhile, make the whiskey whipped cream. Add the heavy cream to a medium sized bowl and beat until it begins to thicken. While beating, gradually add the sugar and whiskey and beat until soft peaks form. Dollop over servings of warm apple crisp.
