SALTINE TOFFEE BARS

My dad is big on chocolate, (I know, who isn't?!). The middle console of his truck is always stocked with goodies to satisfy his sweet tooth, and my daughter, Sophie, hits it up every time she takes a ride with her Papa. (Not fun for me, seeing that I get left to deal with a sugar filled 4 year old.) His favorite is the SKOR bar, a thin slab of butter toffee covered in a milk chocolate coating. That's what inspired me to try this recipe, (and also the fact that it only consists of 4 ingredients! I'm all about easy). This recipe takes less than 15 minutes to make, including clean-up, and, I kid you not, tastes just like a SKOR bar! Actually, I think it's even better. Yes. BETTER. Instead of the rock-hard, teeth breaking bite of a SKOR bar, this has a crisp, buttery crunch, with just the right amount of bite. And with it being so damn easy to make, it's perfect for holiday parties and even better for gifting! You can add toppings to customize them to your loved ones taste.....chopped nuts, candies, pretzels, cookies, coconut, or even sub some chocolate chips for peanut butter ones. Or just keep them for yourself. Whatever. No judgement here. (*cough*fat-ass*cough*)

SALTINE TOFFEE BARS

INGREDIENTS:

1 column saltine crackers
1 cup butter
1 cup brown sugar
2 cups chocolate chips

DIRECTIONS:

  1. Preheat oven to 400 degrees. Foil line and non-stick spray a 9x13 baking sheet. Lay crackers in single layer rows. You can break, or cut them to size, to fill the edges.
  2. In a medium saucepan, melt the butter and brown sugar together and bring to a boil for 3 minutes, stirring occasionally. Pour over crackers and spread evenly with an offset spatula or butter knife. Place in oven and bake for 6 minutes.
  3. Remove from oven and sprinkle on chocolate chips. Place sheet back in oven for 1 minute, to fully melt chocolate. Spread chocolate evenly and score with a knife, so it'll be easier to cut after it cools. If using toppings, sprinkle them on now.
  4. Refrigerate for 1 hour. Once hardened, remove from foil and cut along score lines and enjoy!!
